Baby Boomer Queen’s-Green Mean Recipe

I love cream cheese and so I use it a lot in my cooking and non cooking recipes.

Baby Boomers, here is one of my favorites and it is too easy but don’t tell your friends that!
Serve as an appetizer or main course. I can it “Green and Mean”
The following recipes serves two Baby Boomers.
Baby Boomer Queen’s “MEAN GREEN” Recipe
Gather All of Your Ingredients
2 burrito size burritos…I prefer the flavored ones
1 pkg Philly cream cheese
2 pkgs of frozen chopped spinach
small can of green chilies
12 diced black olives
4 oz of Mexican grated cheese
1 lime
I use marjoram, sea salt, fresh ground white pepper, oregano, cumin, garlic power and chili powder. A pinch of each.
Preheat oven to 350 degrees
Roll the lime so that it is soft. Grate half of the skin into the mixture and half into the green chili sauce.
Bring Pilly cream cheese to room temperature
Nuke the spinach in the boxes (microwave)
drain and get ALL of the water out
Put 1 teaspoon of lime juice into the mixture.
Add your spices to season to your particular tastes (easy on the salt) mix well
Spread mixture on burritos, add the sliced black olives (keeping out 16 pieces for toppings)
Season to taste with marjoram, sea salt, fresh ground white pepper, oregano, cumin and chili powder.
Blend the green chili in the blender with chili pepper, white pepper, the other half of grated lime skin, one pinch dried parsley flakes and a half pinch of salt.
Roll the burritos with both sides in
Butter them lightly or use olive oil.
Put in the oven at 350 for 15 minutes or until lightly brown
Pull out cover with green chili sauce and cook an additional 10 minutes.
Sprinkle with cheese and garnish with olive slices.
Cut on the diagonal and serve immediately.
You can also use this recipe as pinwheels. Just wrap tighter, cut an inch wide and serve the green chili sauce as a dip. Sprinkle the Mexican cheese over the pin wheels just before they come out of the oven so that the Mexican cheese melts. You can skewer the pin wheels if you like.
Add jalapenos if you like spicy and serve with Negro Beer and lime. And don’t forget to serve with salsa and Mexican music.
Note: You can make this recipe as spicy as you wish and even use a microwave to cook it. I do not trust micro waves and I prefer my burrito enchiladas crispy.
Taco, corn or flour tortillas can also be used. It just makes smaller enchiladas. I suggest you place them in a pan and side by side, like cabbage rolls.
You can easily replace the spinach compost with beef, beans, chicken, vegetables or what ever your favorite filling is…
