Baby Boomer Queen’s Watermelon Sorbet

Easy Watermelon Sorbet

Pick the kind of watermelon you like best…I like the NON~seedless watermelons. I am an old fashioned girl and the seeds are easy to pick out.I think they are sweeter and have a better flavor.
I always make sure the watermelon is icy cold when I make sorbet because the freezing time is less.
Cut your watermelon cut and/or save the rind for Pickled Watermelon Rind later.
Ingredients:
8 cups cubed (1 inch) watermelon, seeds and rind discarded
1 cup Simple Sugar Syrup
(this is nothing but 2 cups water and 2 cups sugar brought to a boil…let set 5 minutes to cool.Leftovers can be stored or frozen to save)
2 tablespoons fresh lemon juice
(you can also grate some of the rind into your sorbet if you like lime)
Preparation:
Puree the watermelon cubes in a food processor. Measure 4 cups of the puree and place in a bowl. Add the Simple Sugar Syrup and lemon juice and stir well.
Freeze in sealed containers
Extra Added Ingredients:
Mini dark chocolate pieces. If they are frozen it woks better. No melting! (of course your calorie, carbohydrates and fat intake will go up…I say go for it because it is really cute, they look like seeds)
You can add some red food coloring if you like to make it more appealing to the eye.
You can use sugar substitute in this recipe…just follow the box for the measurement that you need.
For adult sorbet, add vodka or watermelon liquor to your mixture or top it when serving. OR plug your watermelon before you cut it up and it will be in your watermelon.
Serving suggestions:
Serve with a sprig of mint, it’s edible and eye appealing.
Save some of the rind and serve it on the rind. You can even shape your sorbet like the watermelon, once it gets frozen and then quickly freeze again for a few minutes.
Or you can cut round circles and scoop some of the fleshy rind out to make little dishes or boats.
Save a small piece of watermelon, serve your sorbet in a cocktail glass and garnish like a cocktail.
Have some fun with it watermelon is easier than a pumpkin to carve.

Per 1/2 cup: 80 calories, 21g carbohydrates, 1g protein, no fat, no cholesterol.
This recipe makes:
1 1/2 quarts to serve 12.
