Curry Vegetable Stew With Pumpkin Recipe

This is a quick vegetable stew recipe is made with canned and frozen vegetables, seasoned with curry powder and cumin. It is just that simple and easy.
INGREDIENTS for Curry Vegetable Stew With Pumpkin Recipe
1 pkg (16 oz each) frozen cauliflower florets
2 teaspoons curry powder
1/2 teaspoon ground cumin
1 can of fire roasted diced tomatoes with garlic (undrained)
1 can of garbanzo beans, rinsed and drained
3/4 cup solid-pack canned pumpkin
3/4 cup water
1/4 teaspoon sea salt
1 cup frozen green peas
DIRECTIONS for Curry Vegetable Stew With Pumpkin Recipe
* Cut or break large florets into smaller pieces
* Place cauliflower in covered microwave-safe container and microwave on HIGH 8 minutes or until tender…stir them after 4 minutes
*Place curry powder and cumin in large nonstick skillet and heat over medium heat just until fragrant (do not forget to stir)
* Add undrained tomatoes, beans, pumpkin and water
* Bring to a boil over a medium-high heat
* Add cooked cauliflower and sea salt
* Reduce heat to medium and simmer 15 minutes, stirring in the frozen peas in the last 5 minutes.
