Grilling Recipes-Grilled Taco Spiced Chicken Recipes

Baby Boomers, it is summer and everyone is looking for Grilling Recipes, so why not try these Grilled Taco Spiced Chicken Recipes?
Grilling Recipes do not have to complicated or hard and this one is not and on top of that. this recipe only takes about 30 minutes. Perhaps we should give Rachael Ray a heads up on this one?
This particular Grilling Recipe was voted Best 30-Minute Meal of 2008 by the Betty Crocker folks. So, think Grilled Chicken Breasts, smoked with flavor from bottled sauces, cumin and taco seasoning.
INGREDIENTS for Grilled Taco Spiced Chicken
2 tablespoons Taco Bell, taco seasoning mix (from 1-oz package)
1 teaspoon dried oregano leaves
4 boneless skinless chicken breasts (about 1 1/4 lb)
1 tablespoon olive (if you want to cut oils spray with olive oil spray)
1/4 cup barbecue sauce
2 tablespoons chili sauce
1/2 teaspoon ground cumin
DIRECTIONS for Grilled Taco Spiced Chicken
1. Heat your gas or charcoal grill.
2. In small bowl, mix taco seasoning mix and oregano.
3. Brush chicken with oil and sprinkle with taco seasoning mixture.
4. Place chicken on grill on a medium heat. Cover grill; cook 10 to 15 minutes, turning once, until juice of chicken is clear when center of thickest part of the chicken is cut or when chicken comes to 170°F.
5. In a small microwavable bowl, mix barbecue sauce, chili sauce and cumin.
6. Cover and microwave on High 30 to 60 seconds or until hot.
7. Serve the sauce over chicken.
For Oven Directions:
1. Heat oven to 375°F.
2. Line shallow baking pan with foil or spray with cooking spray.
3. Place coated chicken in pan.
4. Bake 25 to 30 minutes, turning once, until juice of chicken is clear when center of thickest part is cut or when chicken comes to 170°F.
For High Altitude (3500-6500 ft): Cook chicken covered over medium-low heat 15 to 20 minutes.
Variations for Grilled Taco Spiced Chicken:
Wrap Sandwiches: For a zesty lunch or dinner, make wrap sandwiches, slice the warm chicken into strips and serve with tortillas, shredded lettuce, sliced avocado and the great sauce you just made.
Tacos: Make soft or crunchy tacos by slicing the warm chicken into strips and serve with tortillas, shredded lettuce, sliced avocado and the great sauce you just made.
