1(1 pound) package dried black eyed peas
2 quarts water
!/2 finely chopped small white onion
one large bay leaf
one ample tablespoon of olive oil
1/4 teaspoon of parsley
Add your ham hock, neck bone, ox tail, a ham bone, piece of salt pork or several slices of bacon, even sausage for flavor
Sea salt and fresh ground pepper to taste…
You can add jalapenos if you like your Black Eyed Peas HOT or simply serve with some hot sauce, so everyone can eat them.

Search through the Black Eyed Peas for rocks and other alien items
Wash peas
Soak your peas in cold water overnight or at least 6 hours
Drain and gently rinse off again
Place peas in large pot and cover with water
Add spices, onion, oil and bay leaf
Add ham bone, bacon or what ever meat you are going to use to flavor the beans
Simmer for about 2 hours or until the Black Eyed Peas are tender
Add water if needed while cooking, don’t let them go dry…
Add your clean silver dollar before serving…
