INGREDIENTS for Tailgating Grilled Potato Kabobs With Lemon Herb Drizzle Recipes
Lemon Herb Drizzle:
- 1/4 cup extra virgin olive oil
- 3 cloves garlic, minced
- 2 tablespoons chopped fresh herbs of your favorite herbs such as basil, rosemary, marjoram and sage
- 1/2 teaspoon sea salt or salt to taste
- Juice of 1 fresh lemon
- Freshly ground pepper, to taste
- Wood skewers
INSTRUCTIONS for Tailgating Grilled Potato Kabobs With Lemon Herb Drizzle Recipes
Potato Kabobs
- 1 lb. russet potatoes, scrubbed
- 1 (12-oz.) pkg. precooked chicken sausage, sliced ø-inch thick on the diagonal. Omit if vegetarian.
- 2 ears corn cut in 1-inch pieces
- 2 bell peppers (any color), seeded and cubed. Use one red for color and sweetness.
- 1 zucchini, sliced 1/4-inch thick on the diagonal
For Lemon-Herb Drizzle:
1. Pre-soak your wooden skewers (10) so that they do not burn when placed on the grill. (2 skewers for each kabob, 2 extra just in case some break).
2. Heat olive oil in a small saucepan until very hot; take off heat and stir in garlic.
3. Let cool, then stir in herbs, salt, lemon juice and pepper; set aside.
Pre-Game Work For Tailgating Grilled Potato Kabobs With Lemon Herb Drizzle Recipes
1. Place potatoes in a medium-size microwave-safe bowl and cover with a lid or plastic wrap. If using plastic wrap, make sure plastic wrap is not touching any ingredients and poke one small hole in cover to vent.
2. Microwave on high for 10 to 12 minutes or until potatoes are tender (cooking time may vary depending on microwave). Caution, use oven mitts to carefully remove from microwave.
3. When cool enough to handle, cut into large chunks. Thread potatoes, sausage and vegetables onto skewers. Rotating the pieces. I use two skewers on each kabob so that the vegetables do not flip over when I turn them.
Your kabobs are now ready to be placed on the grill. Make sure that you keep refrigerated until you are ready to grill. Even vegetables need proper care.
Grilling Potato Kabobs
* Grill over medium high heat for around 10 minutes, turning frequently and brushing with a little of the herb mixture during the last few minutes of cooking.
* Remove from grill and place on a platter; drizzle with remaining herb mixture.
