Quick and Easy Cold Beet Soup Recipe-A Diabetic and Heart Healthy Recipe. This is the easiest Beet Soup Recipe that I have ever found. Buy jarred cooked beets and there is no mess and a very quick recipe. This is an excellent Passover recipe.

Save the beet juice and drink it. two glasses of beet juice a day will help lower your blood pressure. Save the beet juice, freeze the juice and make ice cubes out of the beet juice and your Beet Soup will be thicker and have more of a beet flavor.

You can flavor this soup many ways. Personally I like some ginger in mine and just a tab of vinegar and some sea salt and some white pepper. Or try something new by adding some pomegranate to your beet soup. Add 1/4 cup of honey if you like your beet soup sweet.

INGREDIENTS:

* 1 cup cooked beets (if buying beets-get bottled beets)
* 2 tablespoons fresh lemon juice
* 1/2 small onion (use sweet onions like Maui or Vadallia)
* 1 1/2 cups low fat sour cream
* 1 cup crushed ice

DIRECTIONS:

1. Place sour cream, lemon juice, onion and beets into a food processor or blender and puree until mixture is smooth.
2. Add ice or cold water, chill and serve with a dollop of sour cream on top and a few mint leaves or sliced green onions.

Serves:
Makes two large bowls or 4 small cups.
