A cake makes up one of those dishes that almost all the people in this world relish eating, irrespective of their age. Cakes form an essential part of every festivity and no celebration is complete. Weddings are not complete without the cake cutting ceremony.
So, how can a Mother’s Day celebration be absent of a cake?
This Mother’s Day, be a little different…instead of opting for a ready made box cake, bake one at home. Your Mother has probably baked a cake on every special day of your life, right from your birthdays to the days you achieved a minor success.
Change this, by baking a cake for her on Mother’s Day.
This might sound surprising to many of you, but the small act of baking a cake would speak millions about the love you have for your Mom and also bring a wide smile across her face.<
For baking a cake, all you need to do is dedicate some time and get the raw materials ready. Be sure that your mother is going to love the efforts that you have put forth.
You can always bake that favorite cake that she loves so much. But, just in case, here is a Carrot Cake everyone will love.
Mothers Day Carrot Cake
Ingredients
Butter and flour a 9 inch round by 3 inch deep cake pan.
Line the bottom with parchment paper and set aside.
Put the carrots into a large mixing bowl and set aside.
Put the flour, baking powder, baking soda, spices, and salt in the bowl of a food processor and process for 5 seconds.
Add this mixture to the carrots and toss until they are well-coated with the flour.
In the bowl of the food processor combine the sugar, brown sugar, eggs, and yogurt.
With the processor still running drizzle in the vegetable oil. Pour this mixture into the carrot mixture and stir until just combined.
Pour into the prepared cake pan
Bake on the middle rack of the oven for 45 minutes.
Reduce the heat to 325 degrees F and bake for another 20 minutes or until the cake reaches 205 to 210 degrees F in the center.
Remove the pan from the oven and allow cake to cool 15 minutes in the pan.
After 15 minutes, turn the cake out onto a rack and allow cake to cool completely.
Frost with cream cheese frosting after cake has cooled completely.
Happy Mothers Day-Carrot Cake Recipe-Holiday Cake Recipes and Cream Cheese Frosting:
8 ounces cream cheese
2 ounces unsalted butter, room temperature
1 teaspoon vanilla extract
9 ounces powdered sugar, sifted, approximately 2 cups
In the bowl of a stand mixer with paddle attachment, combine the cream cheese and butter on medium just until blended.
Add the vanilla and beat until combined.
With the speed on low, add the powdered sugar in 4 batches and beat until smooth between each addition.
Place the frosting in the refrigerator for 5 to 10 minutes before using.
Yields: approximately 2 cups of icing
Cake Options:
Place 1/4 cup of very drained crunched pineapple and 1/2 cup of cropped pecan or walnuts between the layers. Place on top of the bottom iced layer.
You can also add these addition items inside the cake mix as well as on the bottom layer. I like a moist cake, so I add these extra ingredients inside and out.
To reduce the calories, replace 10 oz apple sauce for the 6 oz of oil.
