Easy No Cook-Low Calorie-Chocolate Peanut Butter Fudge With Potatoes-Recipe is as easy as 1-2-3.
This delicious chocolate fudge, has mashed potato in the recipe. No one will be able to tell that not only is it low cal, but that it has mashed potatoes in the recipe.
INGREDIENTS
* 1 small potato-one 5 oz potato OR 1/3 cup instant unflavored mashed potato mix
* 1-2 tablespoon milk (skim works well)
* 1/2 cup semi-sweet dark chocolate chips
* 1/2 cup smooth peanut butter (natural works well or you can use crunchy with peanuts)
* 1/2 teaspoon vanilla
* 1 1/2 cups powdered sugar
* 1/2 cup unsalted peanuts or your nut of choice, finely chopped (optional)
DIRECTIONS for No Cook-Low Calorie-Chocolate Peanut Butter Fudge With Potatoes Recipe
1. Peel and cook potatoes then mash with enough milk to make them fluffy (you should have 1/3 cup mashed potato).
2. Line a 8x4x2 inch loaf pan with foil, extending foil over the edges of the pan; spray the foil with nonstick cooking spray.
3. Melt chocolate
4. Stir in mashed potato, peanut butter, and vanilla
5. Stir in powdered sugar
6. Stir in half of the peanuts.
7. Turn fudge into prepared pan, press down evenly; sprinkle with remaining peanuts, then press the peanuts into the fudge.
8. Chill until firm, once firm, use the foil to lift the fudge out, cut into 1 inch squares.
9. Store in a tightly covered container in the fridge.
