Apple Pizza Recipe-A Vegetarian Diabetic and Heart Healthy Must Have Recipe

Apple Pizza Recipe-A Vegetarian Diabetic and Heart Healthy Must Have Recipe. Call it Apple Pie or Apple Pizza,if you are a diabetic, it is A Diabetic Must Have Recipe.

Use it as a desert or a main course, it is a fairly fast, easy pizza recipe, that is delicious. You can make the apple filling and freeze it so that you can cut your prep time in half.

Apple Pizza or Apple Desert

INGREDIENTS
1/2 of a (15-ounce) package folded , refrigerated, unbaked pie crust (1 crust)
1/2 cup toasted sliced almonds
1 (8-ounce) package light cream cheese (Neufchatel), softened
3 tablespoons apple juice
1 teaspoon vanilla extract
1/4 teaspoon ground cinnamon
4 medium tart apples, cored, peeled and sliced (3 1/2 cups)
1 cup apple juice
1/4 cup golden raisins or regular raisins
1/4 teaspoon ground cinnamon
1/8 teaspoon of fresh ground nutmeg
2 tablespoons apple juice
1 tablespoon cornstarch
2 packets  of sugar substitute or 2 tablespoons of honey

DIRECTIONS

Making The Crust

1. Unfold pie crust; roll out on floured surface to form a 12-inch circle.
2. Place, floured side down, into a 10-inch tart pan with removable bottom.
3. Press up sides.
4. Trim and remove excess pastry.
5. Prick bottom and sides with fork. Line with a double thickness of foil.
6. Bake in a 450*F (230*C) oven for 8 minutes.
7. Remove foil. Bake for 5 to 6 minutes more or till golden.
8. Cool on wire rack.

MakingThe Filling

1. Meanwhile, chop 1/4 cup of the almonds.
2. Beat together softened cheese, 3 tablespoons apple juice, vanilla, 1/4 teaspoon ground cinnamon, 1/8 fresh ground nutmeg, and 3 teaspoons of honey (or 3 packets of sweetner)
3. Fold in chopped nuts.
4. Spread mixture evenly in cooled crust. Set aside.
5. In large skillet combine apples, 1 cup apple juice, the raisins and 1/4 teaspoon ground cinnamon. Bring to boiling.
6. Reduce heat and simmer, covered, 2 to 4 minutes or till apples are just tender.
7. Quickly remove apples and raisins with slotted spoon.
8. Combine 2 tablespoons apple juice and cornstarch; add to skillet.
9. Cook and stir till thickened and bubbly.
10. Cook and stir for 2 minutes more.
11. Remove from heat
12. Add 2 teaspoons honey or two packets of sweetner
13. Fold apples into glaze
14. Spoon over cream cheese layer.
15. Sprinkle with remaining almonds.
16. Cool, cover and chill until serving time.

Pizza Pie Toppings Options
Exchange apples for peaches
Sprinkle whole oats on top
Exchange different nuts for almonds
Top with sugar free ice cream

Serving:Makes 10 servings.

1 Fruit, 1/2 Bread, 1/2 Meat, 2-1/2 Fat.
