Drinking two cups of beet juice a day may reduce blood pressure according to a new study from Queen Mary University of London.

The British researchers who conducted the study say the findings add even more weight to the importance of eating a diet rich in fruits and vegetables.

There are all kinds of beets on the market today…all different colors of beets and you can incorporate them into your meals or even pickle eggs with beet juice.

If beet juice is too strong for you, try this trick- mix it with carrot or apple juice.

Beets are root vegetables and loaded with the nutrient nitrate. Spinach, lettuce, and other green, leafy vegetables also have high levels of nitrate oxide. Nitrate Oxide relaxes blood vessels in the body.

Mayo Clinic explains how nitrate works in the beet juice. It is converted by bacteria living on the tongue into the chemical nitrite. Once it enters the stomach, it becomes nitric oxide or in other words, it re-enters the blood stream as nitrite.

The researchers in the new study, have found that blood pressure was at its lowest when the nitrite levels in the blood were at their highest.

The nitrites then work by protecting against endothelial dysfunction, which means that blood vessels have trouble expanding or contracting to handle changes in blood flow. They also have anti-platelet properties.
