Start Spring With This Minted Citrus Tea Cookie Recipe and serve these cookies at your high tea.
Mint is a heavily perfumed, reddish green leaf mint with a citrus fragrance and flavor. It is used in cooking, tea, drinks, fruit desserts and is a nice addition in potpourris…but it also makes these great spring cookies.
INGREDIENTS:
1 2/3 cup flour
3/4 teaspoon baking powder
1/8 teaspoon sea salt
1/3 cup butter softened
1/3 cup granulated sugar
1/2 cup powdered sugar
1 1/2 teaspoons grated lemon peel
1 1/2 teaspoons grated lime peel
3 tablespoons finely chopped fresh mint
1/4 cup Extra Light Olive Oil
1 farm fresh free range egg
DIRECTIONS:
Mix flour, baking powder and salt in small mixing bowl and set aside.
In a large bowl, cream butter, granulated sugar and confectioners’ sugar
Add lemon and lime peels and mint.
Blend in olive oil and the egg.
Stir in flour mixture.
Cover and refrigerate for 1 to 2 hours.
Preheat oven to 350ºF.
Shape dough into 3/4-inch balls and place 2 inches apart on an ungreased baking sheet.
Dip tops in sugar and place on baking sheet, sugared side up.
Flatten to 1/8-inch thickness with fork or bottom of drinking glass dipped in granulated sugar. Bake 7 to 11 minutes, or until cookies appear set in center.
Carefully, immediately remove cookies from the baking pan.
Cool on wire rack.
Prep Time: 23 minutes
Chill time: 1 hour
Cook time: 18 minutes
Total time: 1 hour 41 minutes
Makes about 2 1/2 dozen delicious Spring or High Tea Cookies.
