Heart Healthy Fresh Spring Asparagus Soup Recipe is wonderful this time of year because asparagus is fresh now.

Asparagus is a wonderful vegetable it is one of the most nutritionally well balanced vegetables in existence. It leads nearly all produce items in the wide array of nutrients it supplies in significant amounts for a healthy diet.

Asparagus is the leading supplier among vegetables of folic acid. A good source of potassium, fiber, an excellent source of folacin, thiamin, vitamin B6 and one of the richest sources of rutin, a compound which strengthens capillary walls.

INGREDIENTS

1 lb of fresh asparagus
5 cups of water
1 ½ cups of chicken broth.
2 tablespoons of plain low fat yogurt
1 teaspoon of sea salt
1/2 teaspoon of white pepper
Pinch of cayenne pepper

DIRECTIONS:

Break the hard ends off the asparagus spears
Then cut the remaining asparagus into one inch pieces
In a saucepan, bring the five cups of water and 1/2 teaspoon of sea salt to the boil over high heat
Add the fresh spring asparagus and cook until tender (takes about 4 minutes)
Drain into a colander set over a bowl to catch the liquid saving 2 cups of the liquid.
Place the asparagus and 2 cups of liquid in a blender and mix until smooth.
Pour the mix into a saucepan.
Stir in the chicken broth, white pepper and cayenne pepper; bring to the boil.
Remove from heat.
Stir in the plain yogurt.

Serve in warm soup dishes.
