Heart Healthy Recipe-How To Make Twice Baked Potatoes

Twice Baked Potato Recipe is a great snack for Super Bowl or to help lose weight with a wonderful tossed salad. One of the great comfort foods, especially when stuffed with a satisfying mixture of lean ground turkey or chicken strips, broccoli florets plus reduced fat sour cream and Cheddar or Swiss cheese. Adding the tossed salad will give you have a heart healthy meal that will leave you feeling good. This food is high in calcium, potassium, low in cholesterol, low in calories, has vitamin C and the ever evasive zinc.

INGREDIENTS:
4 medium russet potatoes
8 ounces ground turkey or chicken strips
1 cup broccoli florets , finely chopped
1 cup water or low sodium chicken broth
1 cup reduced fat Cheddar cheese divided into two parts
1/2 cup reduced fat sour cream
1/4 cup of dices red sweet peppers
1/2 teaspoon kosher salt
1/4 teaspoon white pepper
3 scallions , sliced
DIRECTIONS:
Wash potatoes
Pierce potatoes all over with a fork.
Place in the microwave and cook on Medium, turning once or twice, until the potatoes are soft, about 20 minutes or use the “potato setting” on your microwave and cook according to the manufacturer’s directions.
Brown meat or chicken in a large skillet over medium high heat, stirring or turning the meat.
Transfer to a large bowl.
Increase heat to high, add broccoli and water to the pan, cover, and cook until tender, 4 to 5 minutes.
Drain the broccoli and add to the meat or chicken.
Carefully cut off the top third of the cooked potatoes; reserve the tops for another use.
Scoop out the insides of the potatoes into a medium bowl.
Place the potato shells in a small baking dish.
Add 1/2 cup Cheddar, sour cream, salt and pepper to the potato insides and mash with a fork or potato masher.
Add scallions and the potato mixture to the broccoli and meat or chicken and stir to combine.
Evenly divide the potato mixture among the potato shells and top with the remaining 1/2 cup cheese.
Microwave on High until the filling is hot and the cheese is melted, 2 to 4 minutes.
Vegetarian Variation:
Replace the ground beef with a soy based substitute or omit the beef altogether and increase the broccoli to 1 1/2 cups and the cheese to 1 1/4 cups.
If you are like me you do not have to use the microwave. Just bake your potatoes instead.

Take the kosher salt out and it would be even healthier! You can always add salt Kosher or designer after.

Salt or no kosher salt…it is a fun recipe and great to eat.
Not everyone can have salt.
I am one of those.
But, I know what to put salt on and what not to put salt on.
I can stand about everything but eggs and liver with out salt and I usually substitute garlic power for salt as it is a natural water retention reducer as well.
