Heart Healthy Super Bowl Blow-Your-Mind-Blue Cheese Dip Recipe for those Super Bowl Chicken Wings you are cooking up for the big game.
I can remember when chicken wings were 10 cents a pound and no one wanted them. Today there is a chicken wing shortage. It is about supply and demand. Face it chickens only have two wings.
Blow-Your-Mind Blue Cheese Dip has the tangy bite of the Blue Cheese that will cut through the fat of the chicken and the creaminess mellows the heat of the chicken. It is a win-win situation.
First buy good blue cheese, this is not where you want to skimp. Buy the block blue cheese and crumple it your self. It is well worth the extra effort and expense.
INGREDIENTS:
2 tablespoons extra virgin olive oil
4 cloves of fresh minced garlic
1/2 teaspoon mustard powder
1 1/2 cup of low fat sour cream. Not on a diet…use regular sour cream
1/2 cup pain Greek-style yogurt
2 tablespoon mayonnaise
2 cups crumbles blue cheese such as Gorgonzola or Roquefort
1 Tablespoon minced parsley
1 pinch paprika
INSTRUCTIONS:
In a medium skillet over a medium-high heat, combine the olive, garlic, shallots and mustard powder.
Saute until the shallots are lightly brown, about 4-5 minutes
Remove the skillet from the heat and let cool for 5 minutes
Stir in the sour cream, yogurt and the mayonnaise blue cheese
Gently stir in the blue cheese
Transfer to your serving dish and refrigerate for at least 30 minutes. I prefer over night so that the flavors can infuse together.
When you are ready to serve, sprinkle with paprika and the parsley.
