The Best Chewy Chocolate Chunks and Cherry Cookies Recipe Ever…I Would Give Up Chocolate-But I Am Not A Quitter.

INGREDIENTS:

1 cup bread flour (makes a better texture)
1/3 cup and two tablespoons unsweetened cocoa
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon kosher sea salt
1 cup dark brown sugar
1/3 cup unsalted butter (softened)
1 teaspoon vanilla extract
1 1/3 cup of fruity red wine (sit 1/3 cup aside for cooking the cherries and 1 cup for you while the cookies are baking
1 large egg (room temperature)
2/3 cup dried tart cherries (about 6 oz I use 8oz because I like fruitier and chewier cookies)
2/3 tablespoons semisweet chocolate chips or chunks the darker and more cocoa percent the better (you can add less but these are CHOCOLATE cookies)
Butter cooking spray

PREPARATION:

  • Preheat oven to 350°
  • Wine poached your cherries…Dried fruit are usually plumped up and softened by a soak in hot water. Give the cherries some flavor at the same time, simmer them in a fruity red wine, add a dash of cinnamon, fresh ground nutmeg and ancho chile powders give them some WOW-power (cinnamon, nutmeg and ancho are wonderful with dark chocolate)
  • Lightly spoon flour into a dry measuring cup; level with a knife
  • Combine flour, cocoa, baking powder, baking soda, and salt, stirring with a whisk
  • Place sugar and butter in a large bowl and beat with a mixer at high speed until well blended.
  • Add vanilla and egg and beat well
  • With mixer on low speed, gradually add flour mixture
  • Beat just until combined
  • Fold in cherries and chocolate chips or chunks
  • Spray your cookie sheets with cooking spray
  • Drop by tablespoonfuls 2 inches apart onto baking sheets
  • Bake at 350° for 12 minutes or just until set.
  • Time to drink that cup of wine that you set aside for your self.
  • Remove from oven
  • Cool on cookie sheets 5 minutes
  • Remove from cookie sheets and cool completely on wire racks
  • Try not to eat any or there won’t be any left…

Cookie Options:
You can also use cranberries instead of cherries.
You can mix your chocolate up and use white chocolate as well
You can add nuts, macadamia’s would be my choice. 2/3 to 1 cup will mix well

This is not one of my Heart Healthy Recipes. Sometimes you have to have something for the soul. That is what this cookie is all about.
