“The Easiest Spinach Quiche Recipe In The Whole Wide World” from The Baby Boomer Queen

INGREDIENTS:

1 pkg (8 oz.) cream cheese, softened
4 free range chicken eggs
1 cup pet evaporated milk
1/4 to 1/2 tsp. ground white pepper
1 pkg (10 oz.) frozen, chopped spinach, thawed and thoroughly drained
1/2 cup diced ham (you can get ham already diced in the meat department) and/or chopped onion
1 prepared deep dish pie crust (you can buy them frozen)

INSTRUCTIONS:

Take your spinach out to de-thaw. You can even use the oven to speed along he process. No wasted energy that way

Preheat oven to 350 degrees and make sure that your oven rack is in the middle of the oven. Place a baking sheet in the middle. It needs to be preheated as well. You will be your quiche on this baking sheet, when the time comes to bake it.

Spray your pie pan with butter spray or lightly cover with olive oil

Place your pie crust in pie pan.

Squeeze spinach between paper towels until almost dry.

In a medium bowl, beat cream cheese with electric mixer until creamy.

Beat in eggs, evaporated milk and white pepper.

Stir spinach and ham or onion into the egg mixture.

Spray your pie pan with butter spray or lightly cover with olive oil

Pour your quiche mixture into your pie crust.

Sprinkle with salt and pepper to taste.

Bake in a preheated 350 degree F. oven on a preheated baking sheet for 55 to 65 minutes, or until a knife inserted in center comes out clean.

Servings: Makes 6 delicious servings.

Variation: Top quiche with sliced tomatoes for added color.
Top quiche with sliced green peppers and or red peppers for added color.
You can substitute spinach for broccoli
You can substitute diced ham for cooked bacon slices, break up to make cutting easier.
Add grated prepackaged four cheeses to egg mixture and just before it is finished cooking, sprinkle some on top to melt.
Add mushrooms
Add jalapenos for a hotter quiche
