Face it is that time of the year and time to start thinking about making those Christmas Sugar Cookies for Santa, friends and family, Don’t forget to save some to leave out for Santa on Christmas Eve with a shot of rum and some milk. This is a very easy recipe. I have even frozen this recipe.

Below is a butter icing for your cookies…just in case you don’t know one.

INGREDIENTS:

1 1/2 cup butter melted or 3 sticks (real butter not oleo!)
2 cups white granulated sugar
4 eggs beaten
1 1/2 teaspoons baking powder ( or 1 tsp baking soda, for a softer cookie)
1 tbs vanilla extract
5 cups of flour

INSTRUCTIONS:

Preheat oven to 375 degrees-when ready to actually bake your cookie dough
Melt the butter.
Whisk in the sugar and let cool until lukewarm
Beat in the eggs and vanilla
Add flour and baking powder (or soda).
Chill for about 30 minutes in the freezer or overnight in the fridge.
Roll out about 1/8 inch thick on a lightly floured board
Cut using different shapes of cookie cutters
Place on ungreased baking sheets
Bake at 375 for 8-10 minutes.
Cookies will be golden at the edges but do not let them brown
Let cool and decorate as desired.
Amount varies with size of cookie cutters.
If making way ahead of time, you can freeze or you do need to refrigerate because of the eggs.
Roll out thicker and make into Christmas Sugar Cookie Pops. Wrap individually.
