Heart Healthy Soup-Chilled Lemony Pea Soup Recipe

This Heart Healthy Soup-Chilled Lemony Pea Soup Recipe is Good All Year Round. Sometimes in the dead of winter or the heat of summer, you might find this quick, tasty heart health soup agreeable. There is nothing like sitting in front of a warm fire with a cool cup of Chilled Lemony Pea Soup. Or during the summer having some Chilled Lemony Pea Soup.
Ingredients
* 2 teaspoons olive oil
* 1/4 cup sliced green onion
* One 14-ounce can reduced sodium, chicken broth(make your own it is healthier)
* 2 teaspoons cornstarch(you can also substitue instant mashed potatoes as a thickener
* 2 cups shelled fresh peas or one 10-ounce package frozen peas, thawed
* 1 tablespoon snipped fresh mint
* 1 tablespoon freshly squeezed lemon juice
* Lemon slices
Instructions
1. Heat olive oil in a medium saucepan.
2. Cook and stir green onion over medium heat for 30 seconds or until soft.
3. Add all but 2 tablespoons of the chicken broth.
4. Bring to boiling; reduce heat. Cook, covered, over medium-low heat for 5 minutes.
5. Stir cornstarch and remaining broth together in a small bowl and mix until smooth.
6. Add cornstarch mixture to saucepan.
7. Cook and stir until slightly thickened and bubbly then cook and stir 2 minutes more.
8. Remove from heat. Stir in peas and mint. Let mixture cool slightly.
9. Transfer pea mixture to a blender container or food processor bowl. Cover and blend or process until smooth.
10. Transfer mixture to a bowl. Cover and chill thoroughly (at least 1 hour).
How To Serve
To serve, stir in lemon juice and garnish with lemon slices and a sprig of mint.
If you prefer lime, it can be exchanged for the lemon. Always serve with a smile
