How to Cook Soul Food-Southern Sweet Potato Pie with Pecans

Some of our readers have been asking for some Soul Food Recipes. So, I have decided to share with you my Southern Sweet Potato Pie with Pecans Recipe…I like my Southern Sweet Potato Pie with Pecans, spicy and creamy. I just know you will love this recipe too.
I love pie, perhaps it is because most pies are made with fruit. This pie is a vegetable pie, because it is made with sweet potatoes. My least favorite part of any pie is the crust, unless it is made from cookies.
With out any more ta-do, I give you my Southern Sweet Potato Pie with Pecans Recipe…if you live in the South, you have to have Soul Food and you just have to use pecans…
Baby Boomer Queen’s Sweet Potato Pie Recipe with Pecans (I just call it “sweet tator pie with nuts”)
Ingredients:
- 1 pastry lined pie shell
- 2 cups cooked, peeled sweet potatoes
- 4 ounces (1/2 cup) unsalted butter
- 1/2 cup heavy cream
- 1/2 cup light brown sugar, packed
- 2 large eggs, slightly beaten
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1 teaspoon ground ginger
- 1/2 teaspoon ground nutmeg
- dash sea salt…that’s a pinch for those of you who don’t know it
- 2 tablespoons brandy, bourbon, amaretto, rum or orange juice
- 1/2 cup dark corn syrup
- 1 cup pecan halves
Preparations:
- Preheat your oven to 425 degrees
- Prick the bottom of the pie crust with a fork (if you do not prick it you must weight it down or it will bubble up on you) place crust in the middle of the oven and bake at 425 degree oven for 12 minutes or golden brown. Set a side.
- Turn oven back down to 375 degrees
- Mash sweet potatoes with half of the butter (1/4 cup). Let cool.
- Add heavy cream, brown sugar, eggs, vanilla, spices, and brandy, rum, amaretto, bourbon, or orange juice. Beat until fluffy.
- Pour into pie crust.
- Bake at 375° for 20 minutes.
- Combine remaining 1/4 cup butter with corn syrup and pecans.
- Sprinkle evenly over top of pie. Return pie to oven and bake 25 minutes longer, or until a toothpick inserted in center comes out clean.
Serve with whipped cream or whipped topping and a smile.
