The Easiest Spinach Popper Recipe You Will Ever Make

    fresh The Easiest Spinach Popper Recipe You Will Ever Make

Ingredients:

  • 1 can artichoke hearts, drained and chopped
  • 15 ounce package chopped spinach, thawed and drained (you can use fresh cooked)
  • 10 ounces (about 1 cup) part skim ricotta cheese
  • 2 beaten eggs
  • 1 garlic clove, minced finely
  • 1/4 cup red onion, minced finely
  • 1/2 teaspoon fresh oregano, minced
  • 1/4 cup shredded part skim mozzarella cheese
  • Freshly ground pepper and sea salt to taste
  • Nonstick cooking spray
  • Mini muffin pans

How to prepare:

  • Preheat the oven to 350 degrees
  • Lightly mix all ingredients together in a large bowl
  • Spray mini muffin tins with nonstick cooking spray
  • Fill with popper batter.
  • Bake for 25 to 30 minutes
  • Remove from the oven and serve…

NOTE:

I normally double this recipe because they are so popular. I like to serve these with a package of beaten cream cheese and I hold back a tablespoon of the spinach from the recipe above and add a teaspoon of sun dried tomatoes or pimento for color (which ever is on hand).I put the spread in the middle and the poppers around it. There is never any left.

For four people do a single recipe for six-eight, double the recipe.
