Baby Boomer Queen’s Recipe for TailGaiting White Chili with Corn Bread

OK…you’ve got the guys or neighbors coming over…or it is your turn for the Tail Gating or Game Grub. What do you serve them? You want something quick as time is involved and yet you are know for setting a fine spread…here is what the Baby Boomer Queen suggests.
White Chili with Sweet or Spicy Corn Bread or White Corn Chips
It is quick and easy and lots of good carbs for you athletes.
Get all of your ingredients together
- 2 onions, chopped
- 4 cloves garlic, minced
- 4 cooked, boneless chicken breast half, chopped 1/2 inch cubes
- 3 (14.5 ounce) cans chicken broth …or… boil your chicken and save the broth
- 2 (4 ounce) cans canned green chile peppers, chopped
- 2 teaspoons ground cumin
- 2 teaspoons dried oregano
- 1 teaspoons cayenne pepper
- 1/2 teaspoon of white pepper
- 12 teaspoon of dried parsley
- 5 (14.5 ounce) cans great Northern beans, undrained
- 1 cup shredded Monterey Jack cheese or Mexican cheese
- 8 oz of sour cream
- green onions-chives
~~~~Corn Bread~~~~
- 2 boxes of Jiffy Mix Corn Bread
- 2 eggs
- 2/3 cup of milk
- If sweet corn bread, 1 tablespoon of sugar
- If corn 1cup of sweet corn drained
- Jalapenos…you add how hot you want it
If Tail Gating, Corn Bread muffins are easy to carry and no mess.
Or two bags of White Corn or Flour Tortilla Chips
Directions
- Heat the oil in a large pot over medium heat
- Add the onions and garlic and saute for 10 minutes, or until onions are tender or transparent
- Add the chicken and chicken broth
- Add green chile peppers
- Add your spices: cumin, oregano and cayenne pepper and bring to a boil
- Reduce heat to low and add the beans
- Simmer for 20 to 30 minutes, or until heated thoroughly
- Pour into individual bowls and top with the cheese, sour cream and green onions/chives.
You can also serve this with:
- 1 cup of corn
- 1 cup of small diced carrots
They add color and flavor to you chili
Serve with corn bread or white corn tortilla chips. If all else fails, serve with crackers or oyster crackers. Can also serve with lime wedges, hot sauce and COLD beer.
Note: For the corn bread, I suggest Jiffy Corn Bread Mix, comes in a cute little boxes…you will need 2 boxes (read the back you will need eggs and milk). You can add a tablespoon of sugar, jalapenos or corn to make it tastier. Make sure you let the corn bread mixture sit 5 minutes before you put it in pan(s) for the oven it will rise better. Jiffy Corn bread has always been good to me!
Make your Chili as mild or as hot as you like but White Chili is normally served mild.
White Corn Tortilla Chips…but them by the bag take two if Tail Gating.
Prep time 15 minutes
Cook time 30 minutes
Ready in 45 minutes
This recipe will serve 8 adults. And tell your friends “you cooked those beans all day.”
