3 cups cucumber , peeled, seeded and diced
2 cups grape tomatoes , halved (or cherry tomatoes)
1/4 cup crumbled reduced-fat feta cheese
1/4 cup red onion , diced
1/2 cup Creamy Dill Ranch Dressing
Freshly ground pepper to taste…

Personally, I love Chickpeas!
Who in their right mind, doesn’t like Humus???
Summer is here and this light dish will delight all.
If I don’t have cucumbers handy, I substitute small cubed apples pieces [the size of a chickpea]. Leave the skins on…that is where the good vitamins are.
